بررسی میزان آلودگی پنیرهای سنتی تازه با گونههای سالمونلا و استافیلوکوکوس آرئوس در شهرستان جهرم- استان فارس

<p align="justify">زمینه: شیر به عنوان یک محیط کشت مناسب برای رشد و تکثیر انواع مختلف میکروارگانیسمها عمل می کند. در طی مراحل تولید پنیر، برخی میکرو ارگانیسم ها مثل گونههای سالمونلا و استافیلوکوکوس آرئوس ممکن است باعث آلودگی آن شوند. با توجه به اینکه پنیر سنتی (غیر پاستوریزه) در مناطق مختلف شهری و روستایی جنوب ایران تحت شرایط غیر بهداشتی تولید می گردد، هدف از انجام این مطالعه، بررسی میزان آلودگی پنیرهای تازه سنتی با دو باکتری سالمونلا و استافیلوکوکوس آرئوس در شهرستان جهرم (جنوب ایران) بود. مواد و روشها: تعداد 200 نمونه پنیر سنتی تازه تهیه شده در شرایط استریل و یخچالی از مناطق مختلف شهری و روستایی شهرستان جهرم جمعآوری گردید. به منظور بررسی آلودگی میکروبی، نمونه ها با روش های استاندارد میکروبیولوژی در آزمایشگاه مورد ارزیابی قرار گرفتند. یافتهها: از مجموع 200 نمونه پنیر 101 (5/50 درصد) نمونه آلودگی با استافیلوکوکوس آرئوس را نشان دادند. درهیچکدام از نمونه ها آلودگی با گونه سالمونلا مشاهده نشد. نتیجهگیری: با در نظر گرفتن میزان آلودگی بالای پنیرهای سنتی در ایران، تولید و توزیع آنها باید تحت کنترل قرار گیرد و اطلاع رسانی کافی در مورد خطرات استفاده از آنها انجام شود. به منظور تعیین سایر عوامل مهم آلوده کننده شیر و فرآورده های آن و مرحله یا مراحلی از تولید که بیشترین آلودگی در آن صورت می گیرد، مطالعات جامع ترضروری به نظر می رسد. </p>
Background: Milk serves as an excellent culture medium for growth of several kinds of microorganisms. Thus, during the process of cheese production, some microbial species such as Salmonella spp. and Staphylococcus aureus may contaminate the products. Since traditional cheese (un-pasteurized) is produced in rural and urban regions in south of Iran under non-hygienic conditions, the aim of this study was to investigate the rate of contamination of fresh traditional cheeses with Staphylococcus aureus and Salmonella spp. produced in Jahrom in the south of Iran. Methods: A total of two hundred samples of fresh traditional cheese were collected under sterile and refrigerated condition from urban and rural areas of Jahrom. All samples were evaluated to find microbial contamination using microbiological standard methods. Results: A number of 101 samples (50.5%) were contaminated with Staphylococcus aureus. No sample was contaminated with Salmonella spp. Conclusion: Considering the high contamination rate of this kind of cheese in Iran, its production and distribution should be under-control, and people should be trained about the harmfulness of this product. More studies seem to be necessary to clarify other important agents which can contaminate milk and dairy products, and to determine in which step(s) of production the rate of contamination is higher.
